An interlocutory appeal is an appeal made prior to the entry of a final judgment on the case. It is done when a ruling by a Judge so impacts a case as to be a major resolution of an element of a case that an attorney and his or her client determines is so important that rather than appeal later they need to do it be for completion of the case.
