what are chances of winning a case with a signed waiver from a customer who's dog was cut and they want us to pay vet bill

If you are a small business, I strongly recommend you start a relationship with a lawyer. You should have your contracts reviewed and have someone trusted that you can call when situations like this arise. Depending upon the size of the vet bill, good business may dictate that you simply pay it and prevent this upset customer from telling all of their friends at the dog park. Legally, a waiver may be effective under certain circumstances, and I would need to read the waiver to determine what type(s) of claims are being waived. Chances might be good, depends on a lot of things you didn't mention. Could be expensive to defeat the waiver though, might be cheaper to pay the claim, depends on the amount of the claim. Do you have insurance? Lots of variables. You would do well to contact a real live lawyer. Someone who has experience with waivers and the circumstances when they are and are not enforced and who knows the caselaw in that area. Good luck.
