If I get a separate auto insurance policy (PL/PD) for my son and he gets into an accident (He is under 18 and living at home) can they sue us, as parents, even though the policy is under him only?

They could sue you if you are on the title to the vehicle. However, as parents, you are not vicariously liable for your children's actions in most circumstances.
