If an employee is being terminated, is it lawful for said employee to record the process of being terminated (ie meetings, conditions + stipulations of the termination, mutual non-disparagement contracts, etc) without the consent of the employer?

It depends. Are all parties to the conversations in Minnesota? Here, if one party (you) knows the conversation is being recorded, it may be legal. But there are many other factors to consider, company policy, confidentiality of settlement or severance agreements, etc.
