can the mortgage company add your property taxes onto your mortgage after the fact that you signed the mortgage papers with us paying the taxes every year on our own

Probably yes. Read your mortgage carefully. If may give the lender the right, at its option, to require you to escrow for property taxes and insurance upon the lender's demand.
