Legal Question in Credit and Debt Law in New York

Newspaper Delivery Person Owes $1200 Bill

A newspaper carrier of mine billed his/her customers 4 weeks in advance and collected $1200 before he/she quit or the customers will mail the carrier their checks because they know the carrier from years of service. Since he quit he is not providing the delivery service for these customers and I have hired someone else to do the job. He did not pay his last bill of $1200 and I want to take legal action. Please advise.
