Video taping illegal fights and misc illegal activities

I noticed that the producer of Bum Fights got into some legal trouble because he paid bums to fight. He was saved because he made them sign papers before filming and denying he ever told them to perform such stunts.

If I were to make my own movie, how can I legally protect myself?

Would it be illegal if I video tape people doing illegal activities on public property without making them sign anything? Would I be able to still copyright the movie under my name?

While releases can help, they won't necesarily save you if you are involved with illegal activity, especially if it can be shown that you are promoting it. My advice to you is don't do it.
