Legal Question in Family Law in New York

My wife and I are looking to divorce in NY (where we married), she lives there I live in UK. We are thinking of having her file the forms herself, however as we live so far apart it is difficult to formally serve the papers to me, however I will sign and return the forms I need to as soon as possible. Is formal service and an Affidavit of Service required, or will we be ok with just the signed and notarized Affidavit of Defendant? Also where it asks for my social security number, should I just put N/A as I don't have one (being a UK citizen)?

Just the AD is fine. It must be notarized at the US Embassy, no other form of notarization is acceptable. For the SSN question, you should ideally sign a separate affidavit explaining why you don't have one.
