Legal Question in Family Law in New York

My wife and I are trying to figure out the details to a separation. She has made up this legal document that she wants me to sign and get signed by a notary. I am not comfortable with this and I was wondering if we could just write up our own agreement without it being so legal and both sign it and have it mean something?
