Legal Question in Employment Law in New York

is there a device that an employer can use in nys called "minimum wage catchup"? where the employer makes you work for nothing at a stocking job,in order to "catchuo" with a service fee you already preformed? that day or week? makes zero sense to me....

This makes no sense; however, a good guess is that it is perhaps a mathematical calculator that is used for servers and owners in the restaurant industry to calculate if they are to pay the minimum wage if what the employee is earning is less than the tip credit (tips from customers) that the employer can use as an off-set.
