Plead Not Guilty to running stop sign violation

I am pleading guilty to running a stop sign violation and my trial date is in 1 week. I was given the chance to plead down to a parking violation and pay a $100 fine, but I am innocent of the charge and do not wish to pay money for something I didn't do.

I am afraid though that this is a situation of the officer's word against mine. Do you have any advice on how best to approach my argument?

The vantage point from the line for stopping has a very limited view. There are always cars parked parallel to the stopping point and one has to move forward, beyond the stopping point to get a good perspective of the traffic before turning left or right. I stopped, as I always do at the line and then rolled slowly forward until I was certain that the ''coast was clear'' before turning right. My contention is that the officer did not see that I had stopped where it indicates one must stop and instead saw only the the slow forward motion beyond where I stopped. This is the only way I can understand how he might think I ran the stop sign. Any advice?
