Legal Question in Wills and Trusts in New York

My sister & I are going on overseas trip in couple of days - we never had wills drawn up by attorney - we wrote 2 seperate documents titled ''Last Will & Testement'' one for each of us whereby we left everything to each other, i.e., if I die I leave her all my stuff & if she dies she left me all her stuff. We had the documents notarized but not witnessed - will these documents be legal ?? We have no other family but each other.
