Legal Question in Civil Rights Law in North Carolina

There are multiple people that owe me money but none of it are on paper. Could I take them to court?

Anyone in theory can sue anyone else for anything at any time. Whether you will win is the more relevant question. Since you post no facts about why each person owes you money, when the loan was made, what evidence you have to support your claim in the absence of a writing, whether you have any partial payments by the debtors and whether you have made a written demand for the money, I cannot answer your question. I also don't know the amount of the loan and whether you could sue in small claims or not.
