what amount of check or how many nsf to one company before they can take legal action with the courts to procucute

depends on the circumstances. For instance, if the account is closed at the time the check is written, that in itself should be enough for a passing bad checks charge. If it can be proven the person had reason to know the checks would be NSF that may be enough to charge with. Call the local prosecutor and see if they can help you.
