Legal Question in Consumer Law in South Africa

my tiler is suing me for money that was not the agreement, he didnt finish the job but we paid him and told him to leave because of the way he was acting, now the sheriff dropped of a letter saying we must pay him! we didnt take any pictures of the uncompleted job and since then we have done it ourselves. we dont have any receipts as well of any payment we made. He is a pastor and didnt think he would be a crook. What must i do?
