Hello, I am a gay man who lives in houston tx and I have my partner moving in with me and I'd like to know if there is anything I need to do to protect my assets such as my home in case things don't work out?

I recommend that you meet in person with a "gay" friendly estate planning attorney. It appears that you live in the Houston area. As you know, there are plenty of attorneys in the Houston area that can help you. I wish you both the best but recognize that advance planning is always the best. The attorney can give you some peace of mind. Also, it is a good idea to do some estate planning now.
