Legal Question in Civil Litigation in Texas

I just recently got brought to court for a theft of an item that cost $ 7.50 and the judge said that since this is my FIRST OFFENSE OF ANYTHING that all i needed to do was write a letter of apology, have the business sign it saying they accept the apology, and bring it back to the judge in 90 days. Well, and few days after that court date, the business had their attorneys send me a notice that i need to pay them around $300 or they might press charges and take me to court. Their making that a civil case. So now I have 2 different cases, civil and criminal. I'm a struggling student with no money, I'm living with my parents with one of them unemployed, and i have no record at all. What should be my next move? Do you really think they'll sue me?

Keep all of the letters having to do with the "civil case," but don't respond to them. Don't do anything unless you are actually sued (you'll be served with a citation).

Be sure to participate in anything that has to do with the criminal case - show up in court, etc.
