Legal Question in Employment Law in Texas

I am a server at Saltgrass steakhouse in galveston. There are a couple of issues I have as far as labor off the clock is concerned. The summary of the matters are after I 'clock out' management often tells us servers to keep working. ie seat tables, run food to tables, clean, ect. Also, there is a promotion that we are supposed to be upselling to the guests. Failure to meet a certain quota consequently leads to a mandatory meeting on Saturday mornings. The catch is this mandatory meeting is off the clock. Any feedback would be appreciated.

Is Saltgrass locally owned, ie, franchise or a company store..like Family Dollar, etc..and if it is, then we may have interest in a class action for violation of FLSA..fair labor standards act..
