In Texas what deed form do I need to add my new wife to my property deed?

You would do this with a fractional interest special warranty deed. Before you do this, I *STRONGLY* recommend that you get written approval from your finance company. Many finance companies have "due on sale" clauses in their contracts. This means if you transfer a portion of your interest in the house, then they can accelerate the full balance of your note. I also recommend you get a title company or law firm to draft the deed for you (it's very cheap to do, and this way you're assured that it's done correctly.)
