Legal Question in Real Estate Law in Utah

I wrote up a contract to have a gentleman restore a vehicle of mine in exchange for another vehicle as payment. After 9 months the guy did about an hour of work to the vehicle and then skipped town. He took my other vehicle as payment and lost a number of parts for the original vehicle. I recovered the vehicle that was to be restored and havent seen the other one since. What can I do legally to persue this individual?
