Legal Question in Tax Law in Utah

Selling from a website as a broker for products that are manufactured and delivered local to the customers, is it possible to simply collect the sales tax from the customers and pay it to my vendors, or do I have to go through the elaborate process of collecting and paying sales tax to each and every state and county?

I hope I correctly understand your question (I'm not sure that I do!). When you sell to shipping location in Utah, you should charge and collect sales tax from the location where you are shipping from. So if you ship from Salt Lake County you should charge, collect, and pay Salt Lake County rates. I hope that answers your question.
