Can my two children be co-successor trustees on my living trust?

Any person over age 18 can be a trustee, including your children. Since you have two children the trust should indicate whether they need to act unanimous (recommended), or whether one of them can bind the trust (not recommended). The best arrangement is to have one of them as first substitute trustee and the other the second substitute trustee.
