DUI Alcohol
after work can my bartender have
a beer (interlock on car, and licensed suspended - can just drive
to and from work) if they have a ride home and are not driving home.

Probably, not a good idea(for various reasons I will not detail here), but since the conditions of your bartender's probation would not likely include a ban on his right to consume alcohol under conditions which would not involve his operation of a motor vehicle, it would not appear to violate his probation.
