If I cash a check but dispute the amount owed to me can I sue for more money?

Unfortunately you have probably limited your chances of succeeding to get more money by cashing the check. Generally, if a debt is owed and someone accepts the payment it can become what is called "accord and satisfaction" so that the amount paid is considered to satisfy the outstanding debt, no matter if the amounts differ. Depending on your fact-specific case, though, you may have some options to pursue to obtain the remaining amount (specifics in a lease for example).
