Legal Question in Civil Rights Law in California

There are two men who have been scheming and concocting evidence to annoy and to get me and my boyfriend in trouble with the law. They have been doing things such as photoshopping pictures, videos, and basically making false claims with the immigration office, the EDD, our employers, and they have even gone as far as fraudulent use of our credit cards. I am certain that they are the ones doing this harassment and defamation of character because I get a log from the spy software that's installed on their computers. This log has information on the letters that they write, their online chats and emails to each other. Can i use this log as evidence in a civil harassment suit?

It's difficult to say, since I don't know how you have gained access to their computers. If you suspect they are committing crimes, you could report them to law enforcement. Be aware, though, that there's a possibility that your action distributing spyware might have been unlawful.
