Property in default doc - Sub Trustee

What is a doc type of sub trustee? This document was filed after a notice of default was sent on a property being rented to my sister.

Your question is puzzling. Maybe "doc" is short for document and "sub" is short for substitution. I guess you are copying abbreviations off the recorder's Web site or monitors. You need to read the documents themselves, not recorder's computer shorthand.
