Change of executor on living trust

can we type a statement to that effect and have it notarized or is there other legal steps that have to be taken?

you can amend your trust yourself, but it is always better to have an attorney do it to make sure you are saying what you want to say (for instance, you want to change the "successor trustee" of your living trust, not the executor, which relates only to a will). If you must DIY, get a good book on trusts for the layperson, such as those put out by Nolo Press.
