loan with interest

if i take someone to small claims court and i win, what happens if the defendant cant pay me? what do i do next?

When you say "can't pay me," if by that you mean they have no assets and no job, you are out of luck until they get assets or job.

If they have assets or job, you can ask the court to force the loser to disclose income and assets. You could also settle with them for a lesser amount, which may be worth it in the time and work it'll take you to take the next step.

That next step is to ask the court for a writ to seize assets or garnish wages.

When all else fails, you could hire a collection agency to hound the guy to hell, for probably a sizeable piece of your pie.
