can an email serve as a legal document as proof of comunication between parties invloved

Yes it can evidence a contract and other things. But not for just any purpose if other requirements apply.

It depends on what the communications is. Emails are certainly evidence of communication, but it will be up to a court to determine just how much weight will be put on the email in determining the truth or validity of a claim. Even though and email is sent, it is hard to prove the receipt by the intended recipient.
