Is there any libel or defamation here?

In response to a USDOJ complaint against my business (a place of public accommodation,) I made the necessary changes to my policies and staff training in order to comply with the requirements established by the Americans with Disabilities Act. The USDOJ closed the complaint against my business when it was satisfied with my actions to conform with those requirements.

The party that filed the complaint has now published (on a website) the details of the case, including my name, the name and address of my place of business, and the name of one of my employees who was involved in the alleged violation. All of the information that was published is true, and it includes the actual text of the original Title III complaint. The published material also features a photocopy or scanned image of my correspondence that was sent to the person who filed the complaint. The individual did publish some of his own personal opinions, and while my establishment is cast in an unfavorable light, I cannot point to anything as clearly defamatory.

Has the complainer committed any violations of any kind in releasing the information (and the DOJ complaint information) concerning this case? If so, what could be done about it?

From the facts you stated, it does not appear that there is any violation of defamation laws.
