Mistake made on billing contract.

I signed a contract for some home improvement contruction to be done on my house. The contract was for $18,000. I noticed that the construction company made a mathematical error in their billing statement, and accidentally undercharged me by $3000. I paid them $15000. The check cleared. How long do I have to wait before they can no longer demand the rest of the money?

The statute of limitations on a breach of contract claim in Florida is 5 years from the time the cause of action accrued.

If you agreed to pay $18,000.00 and the bill is a mathematical error then do the honorable thing and pay the $3,000.00! Do not ask for legal advice to try and circumvent your admitted obligations, unless you have a legitimate reason or defense for witholding the money.
