Legal Question in Business Law in Florida

Money dispute

A client owes money and claims that they would only pay partial payment and is returning custom made merchandise via certified pkg. They have also called and harrassed me on the phone. If I sign for the pkg and recieve merchandise back and only partial payment am I out of luck for the remaining monies? If not, how will I go about collecting remaining balance and how can I protect myself from their harrassement?
