Can I be be sued in civil court

I worked for a food service franchise for a year. I was the manager. The business was robbed about 5 mos. ago the general manager wanted me to write a statement to the Insurance company stating what happened and what was taken I did not do this because I knew that he was claiming more than what was taken. He pursued me for a couple of weeks and I kept putting it off I did not want to lie but I did not want to lose my job either. After a couple of weeks the issue was dropped. Then 3 months later I was fired ( I say )company says ( I quit ) I filed for unemployment and it was denied I appealed and the ruling was upheld. So I dropped the whole thing. My question is If I report my ex-employer to the insurance company ( I know that they reported a few thousand dollars more than what was taken ) can they turn around and say that I am a disgruntled employee and sue me for any reason in court. Any advice would be greatly appreciated thank you

A suit can be filed by almost anyone for almost any reason. Whether it can be maintained or not is another question.

Telling the truth seldom gets one in trouble in the situation you describe. Truth is a complete defense to most law suits for slander/libel.
