how do I file a motion to compel request for production of documentation without a lawyer on my ex

You file it like any other motion, except that there's no standard form for it. Try and find one online, fill it out, and set it for hearing. You're getting beyond the "do-it-yourself-divorce" realm, though, so you ought to seriously think about getting a lawyer. You're at the point where getting a lawyer will probably save you money in the long run.
