Legal Question in Personal Injury in Florida

I am writing a few ebook lesson plans (available to anyone via Internet) for helping individuals learn some simple self-defense with their friends. Do I need a waiver of some sorts?

I would suggest that you consider putting some sort of disclaimer in your book about health, and risk of injury so that your readers understand that they might get hurt if they are not careful.
