What do I need to watch out for if I run an online company in Illinois, but wish to form a LLC in Delaware?

The list is probably infinite, however based on your question, if you are conducting business in Illinois, you likely need to be authorized to do so by the Secretary of State by perhaps registering as a foreign corporation. You need to discuss your situation in detail with an attorney in your area.
