can my ex legally take back gifts like a bed, computer, clothes, etc...even if she has proof of purchase?

If you and your partner did not enter into a marriage, you do not enjoy the benefit of divorce, property division, and spousal/child support.

I recommend that clients who are in a long-term relationship with mingled property/debt sit down together and draft a domestic partnership agreement.

In this instance, because you did not have any agreement between the two of you as to how property was to be divided in the event of a break-up, you would each be entitled to whatever property you brought to the relationship. You mention that she has proof of purchase, and this should make things a little more cut and dried.
