Can I sue the owner of my company for financial compensation with just an email from him that guarantees me two years of salary?

I agree with Barry - it all depends on what the email states, if it was actually initiated by the employer and how it was responded to by you. Not having read any and all of the emails between you and the employer, a complete response cannot be made. In any event, anticipate a defense from the employer to any litigation you initiate.
