Do mortgage companies

hire people to watch your house?

Not generally. But they may check land records from time to time to make sure that the property has not been transferred, which would violate the terms of the mortgage. Also, if there has been a default in payment and a foreclosure, the mortgage company would have to secure the property, insure it, and inspect it regularly if it is vacant, to make sure that there is no vandalism and to protect others from possible injury on the property.
