Legal Question in Civil Litigation in New York

I own a car but have the title in someone else's name for lower insurance reasons the car was previously in my fathers name then gifted to this person bc i could not afford the insurance but i am the owner of this car since new and have documentation that i paid for it also a few receipts that i paid for the insurance, now this person that was my friend is asking me for a large sum of money in order to get my title back or they are threatening to tow the car or take a loan out on the car, the car is 100% mine all my friends and family know this, i am frustrated and extremely upset i dont and i feel i am being extorted for money what can i do to get out of this situation i only have 2 days left to give them an answer if i will give them money or he is threatening to tow the car

You have committed insurance fraud. You are between a rock and a hard place. You have to proceed to court and bring an action in equity to obtain title to the vehicle. It costs money and the vehicle should be worth a substantial sum to be worth your while. Otherwise, you are out of luck.
