It depends on what you are suing for. Generally, contracts in New York carry a six-year statute of limitations. However, the vast majority of Property-Casualty insurance policies shorten the statute to 2 years. There are similar provisions in most other kinds of insurance. There are also other things to sue insurance companies over besides suing "on the policy," i.e., in contract. More information is needed. Their countersuit, again, depends on what they are suing for: non-payment of premiums, fraudulent applications, and insurance fraud all carry different limitations periods.
