Legal Question in Banking Law in North Carolina

I work at a small gas and grocery station as an employee. My manager was working one day and a customer pulled up to get gas. We have "Please Pre-pay" signs on the gas pumps so the customer came inside. They told my manager they didn't know how much they needed so she let them go ahead and pump. We also have a rule that does not allow customers to pay with checks all over the windows, the door, and the front desk. The customer finished pumping their gas and came inside with a check. My manager told her that she can't accept the check and that we have those rules posted on door and above pumps on the window. The customer said that was all she had was a written check so my manager had no choice but to take it. After submitting it to the bank, they sent us a form back that the check had bounced and we tried to call the customer but we can't get in touch with them. They still have not paid for the gas. What should we do?

Your manager needs to contact the police. Isn't this a crime?
