If an officer parks on someones private residental property and sits there watching for traffic violations, could that be used to get a ticket thrown out since they were trespassing and breaking the law in order to catch violations?

No. The officer was probably not trespassing. In order for the officer to be trespassing there must have been a visible sign stating No Trespass OR the officer must have been directly informed by someone with the proper authority ie, the landowner, not to trespass. Even if the office was trespassing - so what?
