if there is a logo (such as the monster energy drink) is it still copyrighted if you change maybe one or two cuts on the side of it?

As a Franchise Attorney I can say the following. Logos are not copyrighted. They are subject to trademark (or service mark) protection. The test is likelihood of confusion. Changing part of another's logo is usually insufficient. Consult with a good trademark or franchise attorney in your area for specific advice.
