Legal Question in Intellectual Property in Texas

I own a business that provides curriculum to a third party university. We are drafting a contract and I want to ensure that not only is the curriculum (and names) protected under my company but also future curriculum that we will develop for the university. I just want to protect myself should we part ways and make sure the university can't "steal" my curriculum.
