how can I insure that my money, left to my children, will not go to their spouses?

There's nothing you could do to prevent a child from giving his or her estate to the spouse (if you have left your bequest to you child outright.) However, you could make your intent clear by including in your will a provision that says your bequest shall be the child's sole and separate property, free from the claims of any present or future spouse.
