If a spouse has signed a quit claim deed to a home are they entitle to half of the equity

All a quit claim deed does is transfer the interest described in the deed. The entitlement to equity would be created in another document (in a dissolution of marriage that entitlement is created typically in the decree and is described in the judgment summary).

The short answer is no, of course this depends upon the circumstances under which the person signed the quit claim deed. If the circumstances under which the person sign the deed are questionable then the deed could be challenged, if not voided. A quit claim deed ends any interest the grantor may have in the real property.
