What is a legal way to record giving money to someone I owe so that I can keep track of the balance and she can not come back to me later and say I never paid her any of it?

Write a check and in the memo line write "including this check toward balance owed, there now remains $XX.XX dollars outstanding." Do this on each check, reducing the total owed on each one until you are paid off.

A better way is to get a signed receipt from the creditor indicating that they have received your payment, and that your current outstanding balance is now $XX.XX

Never pay by cash or money order, always pay by check, and keep copies of all checks that are deposited.
