business owner liability

In California. My fiancee accidentally left her diamond engagement ring on a (tanning) bedside table in a tanning salon. She was in a private room. The room is thoroughly cleaned between customers. She noticed it missing later, after returning home. She is certain about leaving it. No one at the salon admits to seeing it. The owner is denying responsibility. My fiancee did not sign any waivers. Can I successfully sue the owner in small claims court? What will we need to prove, and how can we prove it?

you will need to prove that the owner or an employee either stole it or were negligent.
