A friend has been served with Superior Court papers to appear ON TUESDAY of this next week.Seems on old girlfriend wants undisclosed money she says he owes her

from 3 or 4 years ago

how can a guy defend himself?

she is very wealthy and has unlimited resources

If this is a Summons and a Complaint from her to start a lawsuit against him, then he has 30 days to file an Answer in court describing his defenses. However, there is usually no date to appear. Therefore, this is probably some other type of proceedings. You would have to be more specific to describe what the title of these "papers" is in order to provide a useful answer. Please post again with the title and the type of proceedings.
